so - my house has just been thrashed by the flu.
bad.
i was so sick that i had no voice for nearly the entire week and work was just a disaster because i am meant to be on the phone all freaking day. doug has been barking away with a terrible cough, and even poor maddie has had a runny nose and a little cough. ugh. disease has taken over at the kendalls. i have always heard that chicken soup is meant to help when you're sick so i thought i would give it a whack. i found this recipe on pinterest:

recipe said/ i did
1 boneless, skinless chicken breast/ 2 chicken breasts
1/2 cup matchstick carrots/
1 & 1/2 carrots
1 small yellow onion, sliced/
1 small brown onion
1/2 cup frozen corn kernels/
1 can corn kernels
2 garlic cloves, crushed/
2 teaspoons crushed garlic
2 oz whole wheat pasta/
1 pkt mi goreng noodles haha!
1 tbsp olive oil/
dash olive oil
salt + pepper/
teaspoon chicken salt + cracked pepper
1 tsp garlic powder/
1 tsp onion powder
the juice of 1 lime/
all the mi goreng sachets except the soy sauce
4 cups water/
8 cups water
whack everything in the pot, and allow to simmer away for 30-40 mins, to ensure that cut up chicken is cooked through... easy as!
it was very good, and hopefully helped, but i must admit that i added a lot more water and some chicken stock to make it go further! give it a go, i am honestly convinced that there's not a great of deal of talent involved in making soup, as long as there's water and ingredients, you can't really go wrong!
