Rice Krispy Treats/ LCMs/ Rainbow lunchbox bars


Our kids are obsessed with LCMs, but they seem so expensive when I buy a pack and they all get eaten within a day or two. I have American friends who used to make them all the time (huge thing there - aka Rice Krispy Treats) and I have made them a few times over the years, but I decided with school starting up again soon, now was the time to find a decent recipe. Taste.com.au delivered...


Rainbow lunchbox bars

75g butter
250g marshmallows
6 cups rice bubbles
1/2 cup mini m&ms
1 tbsp sprinkles


1. Grease and line the base of a 20x30cm pan, allowing paper to hang over the sides
2. Combine butter and marshmallows in a large saucepan over medium-low heat. Stir as they melt for 5 or so minutes until there are no lumps and the mixture is smooth.
3. Pour the rice bubbles, chunky sprinkles and m&m's into the marshmallow mixture and stir until all well combined. Pour into prepared pan and use the back of a metal spoon to press down, smoothing and compacting the surface. Set in fridge for a few hours, then slice into bars for serving.

They are absolutely delicious and some nice and bright fun. I have a feeling they'll be on repeat this year!

twas the night before christmas



twas the night before christmas and in the kendall house, as per tradition there were things to do!

a few christmas carols and then luke chapter 2 is always on the agenda, this year doug's father steve read it aloud to us... i love to hear the story of christ's birth, straight from the scriptures, a simple yet everlasting account. we then watched the church nativity video, which always makes me so emotional, marys trust in the lord, the savior being born in a stable... it's so incredible.

maddie was old enough this year to want to leave milk and some treats out for santa, she was so cute, she picked out just the right ones, they had to be arranged "just so"... and she had to pour the perfect amount of milk. i am sure she'll get a thrill out of them being gone in the morning.

i love christmas... it's the most wonderful time of the year. ♥

getting my christmas bake onnn...


last year, mum was away and i stepped up as the "goodie plate maker" in her place. (see linked blog post for recipes) however, there was such raving from the boys at dougs work when he appeared with the plates, that i thought i had better make them again this year. so the baking began and has taken up some what of my time last night and tonight.


my only change this year was to add chocolate rocky road (a packet of chocolate melts, a packet of chopped pink and white pascall marshmallows, a cup of peanuts and two chopped up turkish delight bars) and mars bar slice. yum yum yum. hopefully they will be received just as happily this year. 


clearly it's worth the time it takes and i can see why mum has kept it up all these years. now she's back though... will i? haha. luckily our trays have different things.
