here i am, very pregnant and as madeline put it "very boring" (yes my love, i know it's school holidays, but there is only so much mum can take while she's super tired and awaiting a baby) so when i asked madeline what she wanted for breakfast and she said pancakes, i got my butt into the kitchen and made the kids some.
nutella and banana filled, nutella and strawberry filled... with icecream on the side - and there were no complaints! thank goodness.
i have been using the same pancake recipe since i was a kid and my mum bought isaac and i the family circle kids cookbook (coincidentally the same recipe book that the recipe for my brownies is from - there were some excellent finds in there!) they are more what people consider crepes than the american style pancakes, but we love them. so easy and yum!
pancakes
(makes about 12)
1 cup plain flour
sprinkle of salt
1 egg
1 1/4 cups of milk
mix all ingredients together until smooth
(recipe suggests you set aside for an hour - let's be honest, i have left them for a max of half an hour, maybe once or twice... they are fine if you don't)
pour into hot buttered/oiled pan and tilt to spread
cook each side flipping in between
serve with lemon and a sprinkle of sugar, or whatever else tickles your fancy!
