best ever cupcakes


i baked cupcakes for emmas baptism last week and as usual someone asked me for the recipe... i wish i could take credit for it, but my friends mother found it here and got me onto it. best cupcakes ever, very aptly named...

best ever cupcakes

2 eggs
200ml thickened cream 
1 tsp vanilla essence
3/4 cup sugar
1 cup plain flour

1. crack eggs into a 1 cup measuring cup then fill to the top with cream. pout into the mixing bowl
2. beat for 3 minutes
3. add vanilla essence and sugar
4. beat for 3 minutes
5. fold in flour until blended
6. place mixture in 12 muffin cases
7. bake at 180 degrees celcious for approx 15-20 minutes, until light golden

i have made these over and over and i have never once had them not work out. they are always light and fuffy and delicious. so easy to make, so easy to eat. ♥
